Brake fluid transmits force because liquids do not compress. When fluid at the caliper boils, gas forms, the gas compresses, and the lever comes to the bar. It happens under sustained braking on a descent, which is where it matters most.

230 °C dry is the temperature of fresh fluid. The wet figure — after the fluid has absorbed the moisture it inevitably absorbs — is lower, and it is not published here. Between the two, the wet figure is the one your brakes actually live with.
